Estimating Dietary Risk from Soils in Urban Gardens

Soil contamination is a public health concern in many countries but methods to assess dietary risk from soil metal toxicity have not been standardized worldwide. Laboratory data on urban soils are limited and do not adequately link metal content to associated food plant uptake. Cadmium is a health risk because it accumulates in lettuce and may be consumed at high levels by childbearing women. The hypothesis is that the Lakanen-Ervio (LE) bioavailability factor correlates with the cadmium/zinc ratio (Cd/Zn) in a positive linear relationship indicating dietary risk. These two estimates of cadmium risk were compared for urban soils from USA and Moscow at 0-30 cm depth. Dietary risk thresholds were Cd/Zn over 0.015, and LE factor above 2.5 (as 65.5% of total cadmium). Total soil cadmium and zinc levels generally were higher in the soil samples from USA than from the Moscow area. Correlation between the Cd/Zn ratio and the LE bioavailability is significant for samples from the urban garden and park. Other urban soils show weaker relationships between the two estimates. Soils
